I advice you to look at Skullgirls. Sprite animations there are gorgeous.

Mario and Luigi series on general - they sport lavishly animated bosses and enemies, and even overworld sprites.
Sonic Mania is another example, as well as the inevitable mention of Touhou Fighting Games.
Shantae is also pretty notable for its pixel art animation, even in its gbc origins.
I also almost forgot to mention Maplestory.

Mother 3. The amount of detail put into the animations are incredible. from the little things, like Duster retaining his limp in the pigmask disguise, to the big things like Flint's reaction to Hinawa's death. i also agree that sf3 has some of the best vg animations
